Black Cardamom or Elaichi is obtained after drying the seed pods of the Amomum subulatum plant. Cardamom is one of the most commonly used Indian spices and imparts a smoky, strong, camphor-like flavour to the food. The seeds are usually extracted from black cardamom before use because some find the covering chewy.
