Ingredients
- 4 peeled and cut into chips Potato White 2kg
- 2 tbsp Brown & Polson Cornflour 250g
- For deep frying Pride Vegetable Oil 2ltr
- 1 peeled and sliced Onion Brown x 1
- 2 tsp Alayna Ginger Crushed 400g
- 2 tsp crushed Garlic 350g
- 2 sliced Green Chillies 250g
- 2 tsp Sarson's Malt Vinegar 250ml
- 1 tbsp Amoy Dark Soy Sauce 150ml
- 1/2 tsp Saxa Table Salt 750g
- 2 tsp DesiMe Chilli Powder 400g
- Handful chopped Coriander x 1 bunch
- 1/2 tsp Tate & Lyle Granulated Sugar 1kg
Directions
- To start wash, peel and cut the potatoes into chips, toss them in the cornflour to evenly coat them. Fry the chips in a pan of oil until golden brown. Once done drain on paper towels and set aside whilst we prepare the chilli!
- Heat a drizzle of oil in a pan and place on medium heat. Using a sharp knife cut your onions, green chillies and mince ginger and garlic. Add to the pan and saute until softened. Don't let them brown!
- Next comes the vinegar, soy sauce, ketchup, chilli sauce. Measure carefully and add to the pan. Add the sugar, salt and cornflour and cook until thickens slightly, stirring with a spoon.
- Once the sauce is cooked, add in the chips, red chilli powder and fresh coriander. Cook for 2-3 minutes.
- Enjoy whilst hot!
